Which bones should I use?
“It’s very important for the bones to come from organic, grass-fed/pastured animals,” says Castro. “You want a combination of meat bones, joints, necks, feet/hooves. If that’s too intimidating, a good starting point is to use the carcass of your roasted whole chicken.”
